Everything begins on the slopes of the imposing Ceboruco Volcano. Unlike the traditional red soils, our Blue Weber agaves grow nourished by volcanic earth rich in minerals unique to the Ahuacatl\u00e1n region. Our pi\u00f1as are slowly cooked in traditional masonry ovens, allowing steam to gently penetrate the heart of the agave. In our open vats, the magic happens naturally. We allow native yeasts\u2014present in Ahuacatl\u00e1n\u2019s microclimate\u2014to colonize the must. The fermented must goes through a double distillation in copper pot stills. The first distillation breaks down the matter, and the second\u2014rectification\u2014refines the spirit.
