Harvest and Terroir: The Character of the Volcano

Everything begins on the slopes of the imposing Ceboruco Volcano. Unlike the traditional red soils, our Blue Weber agaves grow nourished by volcanic earth rich in minerals unique to the Ahuacatlán region. Here, our jimadores hand-select only the piñas that have reached full maturity after seven years of waiting, shaving away the pencas with precision to avoid bitterness.

Slow Cooking: Respect for Time

Our piñas are slowly cooked in traditional masonry ovens, allowing steam to gently penetrate the heart of the agave. This patient process—measured in days, not hours—prevents the fibers from burning and transforms complex starches into rich, honeyed fermentable sugars, just as Francisco Miramontes would have demanded in 1933.

Fermentation: The Breath of the Sierra

In our open vats, the magic happens naturally. We allow native yeasts—present in Ahuacatlán’s microclimate—to colonize the must. We add no accelerants; we let the environment, the temperature, and the humidity of the Nayarit highlands set the pace for the transformation of sugar into alcohol.

Distillation: The Essence of Our Lineage

The fermented must goes through a double distillation in copper pot stills. The first distillation breaks down the matter, and the second—rectification—refines the spirit. Our master distillers rigorously cut the heads and tails, keeping only the “heart” of the distillate: the purest, cleanest, brightest portion.

Aging: A Legacy at Rest

Time is our final ingredient. The tequila rests in American white oak barrels, breathing through the wood. In the stillness of our cellar, the liquid takes on amber hues and notes of vanilla, spice, and toasted wood. Each bottle is a testament to patience, waiting for the perfect moment to be shared.
